The place that I used as a kid (15 - 16) was a small clearing along side the highway. This was back in the early 70s. Of course no call phones back then and the nearest exit was miles down the road. So if someone did see me there was no way to call the police and would take them a good 30 minutes or longer to get back to me and then try to find the exace spot.
Highway jacking is the best, Knowing that maybe I been seen. More risky than the old days, what with HQ cameras in phones, but unless somebody has it open, I doubt I'd get tagged. But I suppose some asshole might call the cops. I've seen other clips of guys who jack along side a highway, or run out and shoot their loads in front of traffic. Always hot.
